The base recipe from this book is excellent. It uses corn starch and cream cheese to thicken the ice cream, rather than eggs, so it's a lot less finicky to cook. This cookbook includes the base recipe and many variations, as well as discussion about the premises behind the recipes so that it's quite easy to make your own flavors. The only reason this isn't getting 5 stars is that a good number of the included flavors are too "out there" for me to be all that interested in actualy making them, but the quality of the general content, and the low price on kindle, make it well worth getting. I've heard that Jen's Ice Cream enjoys something of a rabid cult following in the Columbus area, so I may be taking my life in my hands here by saying I didn't much care for the cookbook. It's well formatted (talking about the e-book version here) and I didn't see any egregious errors. It gets a lot chatty, but that's ok. I've never been afraid of unusual flavor combinations. I can even see where she's going with all the cream cheese. What I'm "meh" about is the amount of corn-based products and salt used. Each base has both corn starch and corn syrup in it so she can say she's offering an "eggless" ice cream. You know what? Just give me the damn eggs. Not only is there far too much corn product in all our foods now, but I don't want my ice cream tasting like Byrd's Custard Powder (which, to me, this base does.) So, awesome flavor ideas, not loving the base recipe (which is the base for nearly everything in the book.) I'll likely use my standard (egg) base and adopt the flavor ideas in the book to that. If I'd paid full price for the cookbook, I'd probably be more grouchy about that, but Amazon currently has the e-book for less than $3, and inspired flavor combination ideas alone are worth that.
